Healthy Chicken Wrap Meal

I like chicken meals most especially when I’m out with my son strolling around the mall. Not realizing we’ve been consuming so much calories because of the fatty chicken skin that makes the fried chix so tasty, not to mention the oil used in frying it. I know this habit should stop because my son Mikko has already been inheriting this sinful eating habit. On the positive thought, we can still enjoy chicken without taking in so much sinful fats. One simple chicken recipe that is guaranteed healthy is here for you to try-- delicious chicken wrap that combines two of our favorite flavors: barbeque and bacon!

Ingredients:
4 (3 oz.) chicken breast
8 strips of medium sliced bacon ( a little won’t hurt)
4 whole wheat tortillas
2 cups shredded lettuce
1 cup diced tomatoes
1 can tomato soup
½ cup honey
2 ½ tbsp vegetable oil
2 tbsp Worcestershire sauce
1 tbsp lemon juice
1 tsp prepared mustard

Instructions:
To make the honey BBQ sauce, combine tomato soup, honey, vegetable oil, Worcestershire sauce, lemon juice and mustard in medium saucepan. Bring to a boil over medium heat. Reduce heat to low and simmer, uncovered, for 5 minutes. Reserve the sauce for basting the chicken.

Prepare the bacon by pan frying it over medium heat until crisp or desired doneness. Use olive or canola oil in frying. Place on paper towel to soak up the grease. Set aside.

Preheat the grill to medium heat. Grill the chicken breast on each side for 6-7 minutes or until fully cooked through. While chicken is grilling, evenly baste with the honey BBQ sauce. Remove chicken breast from grill and slice each breast into 4 pieces length wise.

To form the wrap, place 4 slices of chicken breast in each tortilla, top it with two strips of bacon, ½ cup of lettuce, and two tablespoons of diced tomatoes in the center of the wrap. Fold the bottom up, then the sides to close it, it's a wrap! Enjoy!
